Almond Carob Cake with Graviera Cheese

Ingredients

  • 450g sugar
  • 5 eggs
  • 100g almonds
  • 200g olive oil
  • 40g baking powder
  • 1 tablespoon of cinnamon
  • 1/2 tablespoon of cloves
  • The zest of 1 lemon
  • A little Raki or Vodka
  • 200g milk
  • 250g soft flour
  • 250g of raw carob powder
  • 180g Cretan Graviera cheese
  • Carob powder


Directions

1. Beat the sugar and eggs in a blender. When the mixture is fluffy add warm milk, olive oil, Raki, baking powder, cloves and cinnamon. 
2. Add flour, carob flour, almond, Cretan cheese and lemon zest.
3. Place the cake mold in a preheated oven for 45 minutes at 170 degrees.
4. When finished let cool, then remove fro pan. Sprinkle with carob powder and serve.
